Vegetarian recipes?
No this does not mean im ditching meat
but lately the prices on meat are going up and i think it'll be healthier if i eat less meat too and more veggie stuff. The only vegetarian thing i am able to make is pasta salad and other types of salads. I do eat fish, talapia is my favorite! i eat that with rice and veggies on the side, i've made asian dishes but stir fry stuff can be a bit too greasy for me. What other vegetarian recipes are out there?.... since there is vegetarians on here just out of curiousity what do you guys make? maybe this will help me with some ideas and invent things on my own ![]() |

I love a good salad. I put everything I can think of in them except meat. Have you tried spaghetti squash? Cut in half lengthwise, scoop the seeds out, smear inside and rim in olive oil, sprinkle with garlic and mozzerella cheese and pour in canned or jar spaghetti sauce (or your own home-made sauce) cover in foil and bake at 350 degree for an hour for small squash or an hour and half for med. squash.
Also you can still have pizza, but make it a veggie one. (my favorite anyway) Go Mexican without the meat, Go Asian without the meat. Scramble eggs with tofu. (nice protien) Do an omlet with onions, mushrooms, bell pepper, mild cheddar, and diced tomatoes. Make a protien shake with banana and blueberries for a meal. Make a stir fry useing veggies and veggie scramble. (those meats look and tasts like ground cooked hamburger) Buy the viggie burgers when you grill, also most resturants have them on the menu. An Italian dish I make that's always a big hit and has no meat is this: Dice up about 1 cup of yellow onion (not the sweet onions) add to about1/2 cup of olive oil in a sauce pan and simmer till onions look clearer, add 2 diced zucchini squash, unpeeled, and simmer another couple of minutes then add two cans of Italian stewed tomatoes (chop first) some baisil, salt and pepper and simmer till heated thru. Serve with spaghetti noodles, salad and hard rolls or that crusty chewy french bread. |

The veggie burgers are my favorite. Each type takes me a minute to get used to and then I tend to prefer it. The Gardenburgers are my favorite with grilled soy burgers coming in second. I don't like the Boca burgers but loved them when I first stopped eating meat. I crumble up the Gardenburgers and eat them in a tortilla with cheese and ranch dressing.
![]() I don't really cook vegetarian dishes and tend to just eat a meatless version of whatever my family is eating. Cheese enchiladas, quesadillas, bean and cheese burritos, cheese lasagna, salad, etc. ![]() |

I made falafel today with tzatziki (sp?) sauce today. I don't make the falafel from scratch, but the sauce I did. Put it in a pita bread and you a filling meal. The only meat I eat is seafood.
I do make cheese enchiladas a lot too with spanish rice. I do make stir fry with peanut oil, just about a tablespoon. I use the boca ground for ground beef substitution for sloppy joes, spaghetti, hamburger helper, etc. Wanted to add quiches, those are quick and easy. |

I eat a lot of Mexican and Italian both just with things substituting the meat like beans in the Mexican and eggplant or mushroom in the Italian. The fake meats are getting much better, but they are not much cheaper then regular meat. Grilled veges are always great, and IMO reheat really well. If you have a good supermarket nearby I buy lots of little 90 second microwave Asian dishes. They tend to be cheap, filling, and really easy to make.
