Vegan Mac and Cheese Recipe
Background story:
Last night Robert and I were reminiscing about our undergrad days and the delicious food Tallahassee has to offer (believe it or not, redneckville has some good little cafes!) and then we remembered the Soul Food stand outside city hall and OMG DID WE GET A CRAVING! They had the BEST vegan food EVER, especially their mac and cheese, so we did a wild internet search for a recipe that was even mildy similar, and the one we found was pretty darn close. This stuff is seriously addictive. We ate and ate until we couldnt eat any more, then we stuffed in a couple more bowls of the stuff. Then we passed out on the couch. The dogs didnt get walked, the laundry was left unfolded, no studying or grocery shopping done. We just ate then passed out. I thought I would share it with all of you! Warning: If you are a good old american food, burger eating, love my chicken tenders, take me to the chain resturant kind of person, this probably isnt going to work out for you. If you love trying new foods, adore the strange and exotic and dont expect this to taste like Kraft Mac 'n Cheese then you are good to go! 3 1/2 cups macaroni 1/2 cup margarine (I used butter because Im not really a vegan 1/2 cup flour 3 1/2 cups boiling water 1 1/2 tsp salt 2 tbsp soy sauce 1 clove garlic, crushed (I'm a garlic addict, I used 3) pinch turmeric 1/4 cup oil (I used vegetable oil) 1 cup nutritional yeast flakes (yes, 1 full cup) Cook macaroni per packet instructions. In saucepan, melt margarine over low heat. Beat in flour with a wire whisk and continue to beat over medium heat until mixture is smooth and bubbly. Whip in boiling water, salt, soy sauce, garlic and turmeric, beating well to dissolve the mixture. The sauce should cook until it thickens and bubbles. Whip in oil and nutritional yeast flakes. Mix part of the sauce with the noodles and put in a casserole dish. Pour the rest of the sauce on top. Bake at 350 degrees F for 15 minutes then broil for a few minutes. I love soul food. My family all originally comes from Kentucky. Sould food and Down-home food is pretty much the same stuff. Just give me some dairy and meat and I'll be happy!
